Homemade bread is one of my top ten foods of all time. Normally I like not even wheat bread and fresh bread, bread, butter and honey hot make it a favorite treat to our budget. While it may seem intimidating, to even do this, it is really not once to get the hang of. There are three components you need to learn to make our own bread from scratch: the grain, the loops and the bread.
THE KORN
Types of wheat
Spring or winter: Winter red wheat tends to Hava slightly higher protein and is a bit harder than content as spring. Winter red is better for bread baking. There is no significant difference in hard or soft white wheat.
Hard or soft: Hard wheat have higher gluten (protein) and are better for the production of bread. Soft varieties have lower protein and nutrients and are better for pastries, pasta and breakfast cereals.
Red or white: Red wheat tend to wheat as white wheat have a stronger flavor. The most Red wheat varieties are difficult and the most white wheat varieties are soft, but find hard white and soft red if you really prefer one over the other.
I found the best wheat bread to white durum wheat (spring or winter). It has a less "wheaty" taste but still a pretty equivalent nutrient profile.
Memory
If unopened, the optimum durability of wheat, 12 years or more. It is edible for much longer than that, but is not necessarily the same taste or keep nutrient levels. When opened, wheat for about 3 years will remain.
Once it is ground into flour, loses wheat that within unless most of its nutrients from a few days, save it in the freezer. You can add to help keep critters from your wheat oxygen absorber, Bay leaves, or dry ice.
THE MAHLUNG
A lot of people are intimidated by grinding wheat or question me as you grind wheat. It's actually really easy and wheat mills are available in a variety of prices. The main thing you need to decide is your wheat stores on a regular basis if you are planning to use and rotate by you, or if you want to use only your wheat in an emergency situation.
If you want to use your wheat frequently deserves quality investment in an electric grinder. I recommend the Wondermill grain mill after testing some of the popular Mills on the market. It is the fastest, cleanest, quietest and most convenient of electric grinder. A hand grinder is sufficient for emergency use, but make sure, that you get one that is still in a flour grind enough for bread can fine. Back to basics grinder is the cheapest one, I found, that would still flour milling.
THE BREAD
After searching long and hard for the best Vollkornbrot-recipe we finally found one was damn near perfect. It was, fluffy, delicious, good for sandwiches, and the kids would eat it!
You can half this recipe and make a delicious large bread
3 c. very warm water (but not too hot)
1 T. instant or rapid rise yeast
1 / 3 c. vegetables or canola oil
1 / 3 c. honey
1 T. salt
6 Cups whole wheat flour (white durum wheat is best)
1 / 2 c. whole oats
1 / 4 c. gluten with vitamin C
Combine first five ingredients and mix. Add 5 cups of flour, oats and gluten flour. Mix well. Continue to the other 1 c. flour slowly add until the dough is a ball and scratching the excess dough on the sides of the bowl. Let mix for 5-10 minutes. Oven when mixing your 100-125 degrees.
The counter surface oil and your hands (with oil, not flour). Even put your dough on the oiled surface & slice WITH A KNIFE in 2 large or 3 small loaves. Pat and roles in loaf form, then pan put into greased bread.
Switching from your oven, cover loosely with Saran Wrap loaves and put in heated oven to double (about 45-60 minutes) depending on moisture in the air rise. Take bread from the oven and Preheat to 350 degrees. Bake loaves 25-30 minutes. Immediately remove from pans and place on a wire cooling rack.
