SHOEPEG MAIS CASSEROLE
2 Cans (11 oz) Shoepeg corn, drained
1 Can (10 3/4 oz) condensed cream celery soup, undiluted
8 oz sour cream
1 Cup shredded cheddar cheese
1/2 Cup chopped onion
1/2 Cup chopped celery
1/4 Cup chopped green pepper
3/4 Cup butter flavored cracker crushed
2 El unsalted butter, melted
In a large mixing bowl, combine the first seven ingredients. Spray a 2 quart casserole with non-stick vegetable oil spray. Transfer mixture to the saucepan. With sprinkle the cracker crumbs; Drizzle with butter. Bake at 350 degrees for 20 to 25 minutes or until bubbly revealed.

ZUCCHINI AUFLAUF
cut 4 medium Zucchini, sliced
3/4 Cup shredded carrots
1/2 Cup chopped onion
1/2 Cup water
1/2 Cup plain, unsweetened, low - fat yogurt

Preheat oven to 350 degrees.Place zucchini in a medium saucepan, cover with water and boil 5 minutes or until crispy soft. Drain well in a sieve and set aside. CABBAGE CASSEROLE
1 Cup low - fat milk
1/4 Cup egg substitute *.
1/4 Cup salt
1 Cup grated cabbage
1/4 Cup low - fat American cheese shredded
Oven to 400 degrees. Spray a 1 qt saucepan with no-stick cooking spray. set aside. You combine in a medium bowl mix milk, egg substitute and salt. Mix stir well. Fold in the cabbage and cheese. Spoon into prepared casserole dish and bake for 30 minutes.
4 Servings: everyone has 58 calories and each 5 grams of carbohydrates and proteins.
* Use 1 egg instead of egg substitute.
